It is used to add sourness to foods and use as an Antioxidant and a Chelating Agent.

Citric Acid is an acidic food additive found in nature, especially citrus fruits such as lemons. In industrial terms, it can be produced from Sucrose and Dextrose Fermentation deriving from high starchy agricultural raw materials. It is often used to adjust the acidity of the food. It is white powder characteristic and soluble in water.

Application

It is often used to add sourness to Yoghurt and Drinking Yoghurt products and use to control the growth of microorganisms and fungi in some products.

Citric Acid is another substance with a sour taste that is widely used by creating sourness like citrus fruits like oranges, lemons and limes. In the beverage industry, it is generally used to add sour taste, regulate the acidity and colour of fruit drinks. It is preferable to use 9 parts of Citric Acid per 1 part of Malic Acid, causing the taste of the fruit to be boosted and more mellow. In gum products, Citric Acid is often used to create a sour taste in the first touch. As for Malic Acid and Fumaric Acid are often used to increase the duration of sour taste.
